Acai Breakfast Bowl

Acai bowls are taking the health food market by storm and if you go to any health food store, juice bar, or raw/vegan restaurant you will see them on the menu.  This new breakfast food is super healthy but you ALMOST want to feel guilty eating it because it is like eating a thick smoothie or ice cream topped with fruit, coconut, granola, almond butter, or other delicious toppings.

Since the super healthy acai fruit comes all the way from Brazil, here in the U.S.A. you usually can only buy it in frozen puree form or powder form.  The acai berry has a large array of health benefits.  It is touted as having anti-aging effects, as being an energy booster, helping with weight loss, and helping with blood flow (which increases sex drive especially for men).  But if that isn’t enough already, it also helps with heart health, digestive issues, skin health and may even prevent cancer!

I love it because it is d-e-l-i-c-i-o-u-s!

You can try this simple recipe for the basic acai bowl and then add in or top it with whatever you like.  Try putting some goji berries on top to make it even healthier.  Add blackberries, raspberries, pomegranate seeds, granola, pineapple, hemp seeds, kiwi, mango…pretty much any fruit.

INGREDIENTS

1/3 cup chia seeds
1 cup unsweetened almond milk
1/2 cup blueberries
1 4oz packet of ace puree or 4 Tbsp of acai powder
1/2 frozen banana
2 Tbsp buckwheat groats
3 dates
extra almond milk
2 large strawberries
1/2 banana
honey
2 Tbsp almond butter
1 Tbsp unsweetened shredded coconut

DIRECTIONS

In a canning jar combine the chia seeds, almond milk, blueberries, and acai.  Stir well, cover, and refrigerate overnight.  This will make a chia gel.  There will be enough for 2 breakfast bowls.

In the morning mix 1/2 of the chia mixture (or the whole thing if you are making two bowls and then double everything else), the frozen banana, dates, buckwheat groats (or you can put these on top with the fresh fruit), and about 2 Tbsp of almond milk in a Vitamix or high-speed blender.  Pour the thick delicious goodness into a bowl and top it with coconut and fresh banana and strawberries.  Add the almond butter to the bowl and drizzle honey all over.  Mmmm goodness.

p.s. don’t tell anyone I said this (since it’s called an acai bowl and the acai berry is what the craze is) but if you don’t have any acai you can still make this delicious breakfast bowl…just leave it out…still yummy, still healthy.
