Cool popsicles for a hot 4th of July

Want to make a cool and refreshing treat for the holiday without all the sugar?  Try these very simple, very tasty, fruit and almond milk popsicles.  Trust me, the fruit is sweet enough that you don’t need any added sugar.

INGREDIENTS

1/2 carton strawberries washed and stems taken off
1/2 carton blueberries washed
1/2 cup unsweetened shredded coconut
3/4 cup unsweetened almond milk (more as needed)

DIRECTIONS

Blend 1/4 cup almond milk with the strawberries in blender or food processor (add more milk if too thick) and fill the popsicle molds up 1/3 of the way.  Put in freezer for about 1 hour.

Blend 1/4 cup almond milk with coconut in blender or food processor (add milk as needed) and fill the popsicle mold up another 1/3.  Put back in the freezer for about 1 hour.

Blend 1/4 cup almond milk with blueberries in blender or food processor (add milk as needed) and fill up the popsicles mold to the top.

Put in sticks and place back in the freezer for a couple of hours.
