Yum-a-licious is what I think of this sandwich on sprouted bread with raw sunflower seed tzatziki. It is packed full of delicious and nutritious goodness.
First I use sprouted, organic grain, Food for Life bread that you can find in every grocery store or health food store in the freezer section. Many of you may have heard this bread referred to as Ezekiel bread. The company makes 5 types of Ezekiel bread including Sprouted Whole Grain, Sesame Sprouted Whole Grain, Cinnamon Raisin Sprouted Whole Grain, Flax Sprouted Whole Grain, and Low Sodium Sprouted Whole Grain. I like their Genesis Sprouted Whole Grain and Seed bread. They also have 7 Sprouted grains and gluten-free varieties as well as offering many other products like cereal, english muffins, pasta, waffles and much more.
On to the recipe for Sunflower Seed Tzatziki!
1/2 cup raw sunflower seeds soaked for a few hours and then drained
1/4 cup fresh lemon juice (about 1 1/2 lemons)
1/4 cup olive oil
1/4 teaspoon sea salt
fresh ground black pepper to taste
2 Tablespoons fresh dill (or use the dried variety if you have it….it will still be yummy)
1/3-1/2 cup diced cucumber (peel, slice down the middle and remove all the seeds and then chop)
Place the seeds, lemon juice, olive oil, salt and pepper in a high-speed blender or food processor. Mix until well combined and creamy. Put in bowl and fold in the dill and cucumber.
I spread some of the tzatziki on both pieces of bread (the more the better) and then put broccoli sprouts and avocado on one side, spinach and tomato on the other and folded them together for an awesomely amazing sandwich 🙂
You could also put the tzatziki on crackers or toast. Put it in a wrap with some of your favorite veggies or add it to a salad. Use it as a dip. It’s very versatile and very tasty.
