“Don’t come home without an almond joy bar for me.” That is honestly what I started telling my two daughters when they were old enough to go off trick-or-treating with their friends. And, like the good kids that they are, they always came home with one. When they were younger I would just sneak the almond joy out of the candy bag and they never knew a thing 🙂 That’s how much I loved almond joy bars.
But, now that I know what ingredients go into the almond joy candy bar (see below) I would rather make my own healthy version. My version only has 7 ingredients and none of them are sugar, high fructose corn syrup, or any other form of synthetic ingredient, preservative, or chemical!
Ingredients: Corn Syrup, Milk Chocolate (Milk Chocolate Contains: Sugar, Cocoa Butter, Chocolate, Milk, Lactose, Milk Fat, Nonfat Milk and Soy Lecithin (an Emulsifier)), Coconut, Sugar, Almonds, partially Hydrogenated Soybean and Cottonseed oils, Whey, Salt, Cocoa, Vanilla, Chocolate, Egg Whites, Soya Lecithin and Sodium Metabisulfite, to Preserve Color.
Try some of these healthier bars and you may just be hooked. Plus, you won’t have to steal from your kids trick-or-treat bag anymore 🙂
1 cup raw almonds
1 tablespoon pure maple syrup
1/8 cup raisins
1 tablespoon melted coconut oil
1/4 teaspoon pure almond extract
1 cup shredded unsweetened coconut
2-3 tablespoons pure maple syrup
2 tablespoons melted coconut oil
1 tablespoon water
1/4 cup unsweetened cocoa or cacao powder
1/4 cup melted coconut oil
2 tablespoons pure maple syrup
Process the raw almonds until you get a fine powder. You can leave it a little chunkier if you like the crust to be crunchy. Add the next 4 ingredients and pulse until you get a sticky mixture and then press the crust into a square pan lined with parchment paper.
Mix the coconut, syrup, oil, and water together in the food processor or blender and spread on top of the crust.
Mix the cocoa powder, oil, and syrup in a bowl and spread on top.
Put in the freezer for a few hours to set.
Cut and enjoy……Mmmmmmm so yummy!
