Apple Nachos!

Who doesn’t love a plate piled high with delicious goodness?  But why can’t it be as good for you as it is good tasting?  Well, it can, you just have to be creative, read labels, and think happy, healthy thoughts.

Did you know that a plate of traditional loaded nachos can have over 800 calories, over 30 grams of fat, over 10 grams of saturated fat, and over 120 carbohydrates!  Yowza…do you really want to eat that?

These apple nachos make a great after school treat for the kids, party dish for the next gathering, or snack for movie night.  Packed with healthy fruit, nuts, natural no-sugar peanut butter, and dairy free chocolate, it’s a winner in so many ways!

Check out the ingredients that I used below and remember that you can add, subtract, or adjust to your taste.

I cut up some red and green apples and tossed them with a little fresh lemon juice to prevent browning.  next, I warmed up and then drizzled some natural peanut butter on top.  You can also add a little melted coconut oil to the peanut butter if you like it thinner.  I topped it off with some chopped almonds, walnuts, unsweetened shredded coconut, and vegan chocolate chips.  Now that’s a work of art!

Try some of these other toppings if you want to be a little crazy or think outside the box.

goji berries
dried blueberries
almond butter
cashew butter
pomegranate seeds
pecans
vegan caramel sauce
chia seeds
pumpkin seeds
chopped strawberries
sliced bananas

…the possibilities are endless.
