4 Ingredient Raw Peach Cobbler


Yumalicious…if that is even a word 🙂

Fresh peaches (Mmmm, living close to Georgia “the peach capital” has its perks).

I just love desserts that have only a few ingredients, are easy to make, and have no refined sugar, flour, eggs, or dairy.  Oh, and that tastes delicious.  Well, this is one of those desserts.  It is naturally sweet because of the fruit and so there is no reason to add any processed or unhealthy ingredients.


3 cups pitted dates
2 cups raw walnuts
4 large peaches
2 tbsp cinnamon



Combine 2 cups of the dates, all of the walnuts, and 1 tbsp of cinnamon in a food processor and mix until it starts to stick together.


Press half of the mixture into the bottom of a cake or pie pan.

Slice 1 1/2 of the peaches and arrange on top.

Cover the peaches with the remaining half of the nut mixture and then another 1 1/2 peach layer.

Combine the last peach, remaining 1 cup of dates, and remaining 1 tbsp of cinnamon in a Vitamix or high-speed blender and blend until you get a creamy mixture.

Drizzle the mixture over the top of the peaches and refrigerate for 30 minutes to set.

Cut.  Eat.  Enjoy.  Refrigerate any leftovers.
