Strawberry Raspberry Cheesecake Tarts (Raw and Vegan)


I know that Valentine’s Day has come and gone but I can’t stop thinking about these delicious little cheesecakes that I made.  They were so scrumptious!

Aside from being a very delicious dessert, they are also raw, healthy, and easy to make.  Trust me on this one….give them a try….you will thank me.


1 cup walnuts
1 tablespoon coconut oil
1/2 teaspoon vanilla
10-15 dates

1 cup raw cashews
2 tablespoons coconut oil
1/2 teaspoon vanilla
1 tablespoon pure maple syrup
1/2-1 cup sliced strawberries (fresh or frozen)

Put the first four ingredients in a food processor and mix until moist and sticks together when you press on it.  Put in any shaped molds, cups, bowls, or just a square pan.  I actually used a heart cookie cutter and pressed the crust in it on a cookie sheet then removed the cookie cutter.

Put in freezer while making the filling.

Put the next five ingredients into Vitamix and blend until well combined.  Try not to eat it all right out of the blender.

Spread into the molds, pan, or on top of your shaped crusts.

Add raspberries for garnish and put in freezer for about 15 to 30 minutes to set.  Keep in refrigerator until ready to serve.
