Garlic Citrus Vegetable Orzo


My sister sent me a Christmas package with some wonderful goodies in it including several *Butte Creek Mill ground flours (buckwheat, quinoa, brown rice, and grape seed) and a package of vegetable orzo.  I can’t wait to get creative with baking and creating some goodies with all the flours this weekend.

For dinner last night I decided to make a vegetable orzo dish and it was delish!  It is easy to make and full of flavor.  Give it a try tonight….it’s what’s for dinner!


2 tablespoons olive oil
1 cup vegetable orzo
6-8 garlic cloves, roughly chopped
1 carrot, sliced in thin strips
1 zucchini, chopped
1/4 onion, diced
1/2 red pepper, diced
2 cups vegetable broth
2 tablespoons lime juice
1/4 cup cashews
1 tablespoon spice blend (I used **Penzeys Spices “salt free-mural of flavor” which includes lemon peel, orange peel, chives, shallots, onion and garlic)


In a large skillet saute orzo and garlic in olive oil for 2-3 minutes.  Add carrot, zucchini, red pepper, and onion and saute for 3 more minutes.

Add the vegetable broth, lime juice, and spices and simmer covered for 10 minutes.

Add cashews and cook another 5 minutes.  Serve and enjoy!
