Cranberry Blueberry Lemon Almond Coconut Chia Oat Bars


Ok, so I know the name is long but I wanted you to know upfront all the yummy things that are in this healthy (cookie? baked oatmeal?) treat.

I eat mostly all raw desserts but when the weather gets cooler and foods like cranberries start popping up at the store I like to experiment with some baking.

This recipe can incorporate any fruits and/or nuts so play around and add what you like.  I adapted my version from a recipe from


1 cup fresh cranberries
1/2-1 cup fresh blueberries
1/2 cup raw almonds (I kept them whole)
juice of 2 lemons
lemon zest from the 2 lemons
3 Tablespoons chia seeds
1 1/2 cup ground oats
1/2 cup oats (not ground)
1 teaspoon baking powder
1/2 teaspoon sea salt
1 1/2 cups unsweetened shredded coconut (plus some for the top)
1/2 cup unsweetened applesauce
4 Tablespoons melted coconut oil
1/3 cup agave


In a small bowl, mix together the chia seeds and lemon juice.

In a medium bowl, mix together the oat flour (oats that have been processed in the food processor), baking powder, regular oats, salt, lemon zest, and coconut.

In another small bowl, mix together the coconut oil, applesauce, and agave.  Mix in the chia mixture then add to the dry ingredients.

Fold in the cranberries, blueberries, and almonds.

Spread in a baking dish and sprinkle with additional coconut.

Bake at 350 degrees for approximately 20 minutes until the berries start to burst and edges get golden brown.

Best eaten warm.  Refrigerate left overs.
