Baked Apple Pomegranate Oatmeal


Here is a healthy recipe for baked oatmeal that doesn’t use brown sugar, butter, heavy cream or other unhealthy ingredients. You can substitute raisins, blueberries, or other fruit if you don’t have a pomegranate and slice some strawberries, peaches, banana or other fruit on top for added nutrition.  use the basic recipe and then make it your own.


2 t flax meal
4 T warm water
3 cups oats
2 apples (I used 1 red and 1 green) half diced and half sliced
1/2 of the seeds from a pomegranate (about 1/2 cup seeds)
2 1/4 cups almond milk
1 T cinnamon
1/2 t nutmeg
1 T baking powder
1/4 cup finely chopped dates
1/2-3/4 cup walnuts

Pure maple syrup**


sliced strawberries (or other fruit)
cashew cream (blended raw cashews, a little water, and a few drops of vanilla)


Combine the flax meal and warm water and set aside.

Preheat oven to 375 degrees and grease casserole dish.

Mix all ingredients except the sliced apples and topping in a large bowl, folding the seeds in last.  Put in casserole dish.  Top with sliced apples and sprinkle with cinnamon.


Bake 35-40 minutes.  Let sit for 15 minutes before cutting.

Top with sliced strawberries or other fruit and, if you like, cashew cream or nut milk.  To make cashew cream simply blend raw cashews, a little water and a few drops of vanilla.

**I make this without the syrup because I really try to stay away from all sugars.  The maple syrup does add flavor…you decide if and how much you want to add to the recipe.
