No School Jelly Donuts

A Friday with no school calls for making a yummy breakfast treat….jelly donuts!  This is my tweaked version of Fully Raw Kristina’s (www.fullyraw.com) raw donuts.

These little ooey gooey guys are soooo yummy and messy and delicious!  They are also very simple to make.

Ingredients

peaches or nectarines
fresh figs
coconut butter
pure maple syrup
pure vanilla
water
lemon zest

You can see the difference in the above picture of a fresh fig vs a dried fig.  The inside of a fresh fig is filled with a yummy jelly like center.

Directions

Cut your peach or nectarine into rings and take the pit out.  Each nectarine I used made two donuts.

In a small bowl mix 2 tbsp of coconut butter, softened, with 1 tbsp maple syrup, a few drops of vanilla, and about 4 tbsp of water.  Mix and add more water until you reach a creamy frosting texture.

Scoop out the inside of the fig and put it in between two pieces of your peach/nectarine and then spread frosting on the top.

Add “sprinkles” by shaving on some lemon or lime zest.  This step adds a lot of flavor to the donut so you don’t want to skip it.
