Stuffed Avocado


I just love avocados!  They are packed with healthy fats, protein, anti-inflammatory nutrients, carotenoids, and are heart healthy… they just plain taste great!  I add a half an avocado every morning to my green smoothie.  I put slices on my salads and sandwiches.  I mash them up to make fresh guacamole.  The list goes on and on.  So for lunch today I decided to have stuffed avocados….Mmmmm so good!


1 avocado
large romaine lettuce leaf
finely chopped tomato
finely chopped cucumber
finely chopped red onion
balsamic vinegar
lime juice
a couple of cherry tomatoes
pine nuts
scoop of Kris Carr’s Save the Tuna Salad


Simply place a large lettuce leaf on a plate (or use a salad mix or spinach…whatever you like or have in the house).  Cut the avocado in half, peel it and scoop out the pit.  Place both halves on the lettuce.

In a small bowl mix the chopped onion, tomato, and cucumber with a squirt of lime juice.  Scoop into the avocado.

I filled the other half with some Save the Tuna that I had in the fridge (see past recipe).

Sprinkle some pine nuts (or other nuts you like or have) on top, drizzle a little balsamic vinegar on top and decorate with a few cherry tomato halves.

Satisfying, filling, and unbelievably fresh and delicious.
