This is a very tropicalicious 🙂 dessert for the summer. Of course it is 100% raw, healthy, and tastes delicious! Plus you can use whatever fruit you want and can substitute some of the other ingredients to make it to your liking.
This recipe is for a small tart, but makes 6-8 nice little pieces. You can double the recipe and make it thicker or larger if you like.
1 cup walnuts
1 cup raisins (or substitute 1 cup dates or 1/2 cup of each)
2 Tablespoons almond butter
2 Tablespoons coconut oil (melted)
2 Tablespoons honey (you can substitute pure maple syrup or 1/2 cup date paste or a combination of any of the mentioned)
1/4 teaspoon cinnamon
anything you like 🙂
Put walnuts in food processor and chop until almost a fine powder. Add raisins and/or dates and pulse until blended and starting to stick together. Press mixture into tart pan or just onto a plate. Put in refrigerator. If possible let stay in refrigerator for 30 minutes.
Mix all filling ingredients together and spread onto crust. Put back in refrigerator for 30 minutes to an hour.
Put fresh fruit on top. Cut and enjoy!
Keep refrigerated (if there is any left)
