Here’s a soup that is creamy, hearty, healthy and very easy to throw together.
5 cups organic vegetable broth
12 oz broccoli florets
1 large sweet potato, peeled and cut into small chunks
1 yellow onion, peeled and cut into pieces
2 Tablespoons chopped garlic
1 large carrot, peeled and cut into several pieces
1 cup raw cashews
5 fresh basil leaves
black pepper to taste
1 Tablespoon dried parsley
Put broth in a medium soup pot and add garlic, onion, carrot, basil leaves and potato. Let simmer about 10 to 20 minutes until potato gets soft. (if you are in a hurry you can cook the potato ahead of time in the oven or…shhhh…the microwave) Add broccoli and cashews and simmer about 5 more minutes. Add black pepper and parsley. Stir. Put half of the mixture in a Vitamix and blend until creamy. Add the other half and continue to blend. Pour into bowls and top with a little pepper, parsley, or whatever garnish you like.
Note: You could keep out some of the broccoli pieces and potato chunks to add to the blended soup if you like your soup to have chunks. You could also add some coconut milk if you like it to have an even creamier texture. Topping it with some sunflower or pumpkin seeds would also add a nice little crunch.
