Toasted Pine Nut Couscous Salad

Toasted pine nuts are such a treat.  They are so delicious and these tiny little nuts are also nutrient-dense.  They are rich in Vitamin A, lutein, Vitamin D, Vitamin C, iron, protein, and magnesium.  They also fight free radicals and contain heart-healthy monounsaturated fat.

Try this yummy salad that uses tricolored couscous with toasted pine nuts.

Ingredients

1 cup couscous (cooked with 1 1/4 cups water per package directions)
1/3 cup pine nuts
1/2 chopped red pepper
1/2 chopped jalapeno pepper (more or less to taste)
2 tablespoons olive oil
juice of 1/2 a lemon
1 tablespoon fresh cilantro
1/4 teaspoon cumin

Directions

Cook couscous and let cool.  Toast pine nuts in a pan with a drizzle of olive oil until just starting to brown, about 3 minutes.  Let cool.

Mix olive oil, juice of 1/2 a lemon, and cumin in a small bowl.

In a medium bowl add couscous, pine nuts, chopped red pepper, chopped jalapeno, and chopped cilantro.  Drizzle sauce over and stir to mix.

Serve over a bed of leafy greens.
