Easy Slow Cooker Lentil Bean Soup

Want a healthy dinner that is super easy to make?  Try this lentil bean soup that you throw in the slow cooker.  If you chop the veggies the night before all you have to do is dump everything in the cooker in the morning and go about your day.

Ingredients

8 oz lentils
1 can, or 8 oz black beans
5 cups hot water
1 can, or 8 oz diced tomatoes
1/2 onion chopped
4 carrots, sliced
4 celery stalks, chopped
2 tbsp minced garlic
1/2 to 1 tsp cumin
2 tbsp chili powder
2 tsp curry powder

Directions

Put all ingredients in a slow cooker and turn on low for 6 to 7 hours.  Try it topped with some fresh chopped herbs or homemade croutons.  Enjoy!
