Warm Weather is perfect for popsicles and ice cream. My 11-year-old wanted a treat and to experiment in the kitchen so we came up with a few warm weather treats that you can feel good about feeding your kids (and yourself). They have only a few ingredients and are very simple to make.
Real Fruit Popsicles (pictured is strawberry-orange)
Mix and match any fruits you like in a blender and pour into popsicle molds. It is best if you use some fresh fruit and some frozen fruit to get a slushy consistency and then pour into the mold and freeze.
We used frozen strawberries, the juice of one orange, two clementines, and a squirt of agave syrup (my daughter likes sweets…I think you could do without the syrup).
Coconut Mango Ice Cream
2 frozen bananas
1/4 cup shredded, unsweetened coconut
splash of almond milk
blueberries and more coconut for garnish
Put first 4 ingredients into Vitamix or blender and mix until blended and creamy. Put in bowl and freeze. Top with coconut and blueberries.
With frozen bananas as your base you can add any fruits you like. How about trying some cocoa powder and mint leaves for a chocolate mint ice cream. Fold in some chopped nuts if you like a crunch in your ice cream.
Experiment and come up with your own dairy free, sugar-free, variety of ice cream. It makes a great healthy snack.
