You can consume beets many different ways, but here is a great, easy to make, raw beet recipe that ensures you get all those great vitamins and nutrients without cooking any of them away. If you don’t think you are a beet lover, give this recipe a try, you may surprise yourself.
1-2 large beets (each will make approximately 4 salads)
3 tablespoons (per beet) fresh orange juice
1 Tablespoon (per beet) fresh lemon juice
1 Tablespoon (per beet) extra virgin olive oil
2 Tablespoons chopped parsley or mint
chopped walnuts (or pecans or whatever nut you like)
Wash and peel the beets with a vegetable peeler. Grate the beets in a food processor with a shredding blade.
Combine the orange juice, lemon juice and olive oil. Pour over the beets and toss with the parsley. Place atop fresh spinach leaves and sprinkle chopped nuts on top.
