Pomegranate Coconut Dessert Cups


Look at these pretty little gems.  They taste just as good as they look and you can feel good about eating dessert with these healthy ingredients.

Did you know that pomegranates are a good source of antioxidant vitamin C which helps the body develop resistance against infections.  It is also a good source of the many vitamin B groups and has also been found to be effective against prostate cancer, diabetes and lymphoma.


1 cup almonds
1 cup oats
20 dates
1 teaspoon vanilla
1 teaspoon cinnamon
2 Tablespoons agave

1/4 cup coconut butter, softened
1 tablespoon agave

pomegranate seeds


Put the first 6 ingredients in the food processor and pulse until you get a nice mixture that starts to stick together.  Form little “cups” with the mixture by pressing it into small cupcake tins, or dessert cups and then put into the freezer for a few minutes to form.


Take out of the freezer and remove the tin.  Mix the coconut butter and agave together and spread into the middle of the nut mixture and top with pomegranate seeds.  Keep in the refrigerator until eating.
