Mmmmm…..what do you get when you mix up a bunch of fresh ingredients? Something yummy and very versatile. And, oh yeah, it’s healthy too…but you don’t have to tell anyone, they will eat it all up for the great taste.
This salsa is so deliciously fresh and you can do so many things with it. Besides just scooping it up with some baked whole grain pita chips you can put some in a lettuce leaf or whole grain wrap and add some sliced veggies and/or beans and brown rice to make a great wrap. You can top a veggie burger with it. You can fill little grape tomatoes with it or top some cucumber slices with it for great appetizers. There are endless things you can use this salsa for.
You can also add some fresh pineapple or peaches and make it have a more fruity, tropical flavor. You can also add some jalapeno and spices to take it up a notch if you like the heat.
1 ripe avocado
1/4 red pepper
10 cherry tomatoes
juice of 1 lemon (or lime)
1/2 cup fresh cilantro
1/4 red onion
2-3 garlic cloves
1/2 to 1 Tablespoon cumin
Put all ingredients in a food processor and pulse several times. Yep, it’s that easy! You can make it as chunky or thin as you like depending on how much you process it. If you don’t have a food processor….that’s ok….just mash the avocado real good with a fork and chop up the cilantro, garlic, tomatoes, onion, pepper and cucumber into small bits. Add the lemon juice and cumin and stir all together.
I wish you all could just reach through the computer and grab a spoon of this….it is so fresh tasting. I may just eat it all right out of the bowl with a spoon.
