They may not have the pretty Hershey kisses in the middle but they taste just as amazing and you don’t feel guilty after eating one, two, or even three
This is the raw, vegan, healthy, but oh so tasty, version of this favorite cookie. They were even taste tested by my husband and teenage neighbor who both gave them two thumbs up.
1 cup walnuts
1 cup oats
10 pitted medjool dates
4 Tablespoons pure maple syrup
1 teaspoon coconut oil
2-3 Tablespoons almond butter
pinch of sea salt
1/2 cup coconut butter, softened
1/4 cup cocoa powder
2 Tablespoons agave
3 Tablespoons maple syrup
Place walnuts and oats in food processor and mix until a fine powder. Add salt, syrup, and coconut oil. Blend together and then add the dates and process again. Add the almond butter and mix for a few more seconds.
Line a cookie sheet with wax paper. Roll about a tablespoon of dough into a ball, place on cookie sheet and press down in the middle of the cookie with your thumb.
Mix the coconut butter, cocoa powder, syrup, and agave until well blended. Place a small amount in the center of each cookie and then place the cookies in the refrigerator or freezer for at least 1 hour.
