Quinoa is a wonderful source of protein and I usually put it in soups or stir fry it with veggies but today I wanted a nice light cool salad that was different from the big green salad I usually have at lunch. The great thing about this salad is that you can add whatever veggies or fruits you like and it will always taste great.
1 cup organic quinoa (uncooked)
2 cups water (for cooking the quinoa)
2 organic apples
1 cup all natural raw almonds
3 stalks organic celery
1/2 cup organic raisins
organic spinach leaves
4 Tablespoons apple cider vinegar
2 Tablespoons olive oil
2 Tablespoons agave
Bring the 2 cups of water to boil and add quinoa. Cover and simmer over low heat for about 12 minutes until the water is absorbed. Fluff with fork and let sit for about 15 minutes.
Meanwhile whisk together the apple cider vinegar, olive oil, and agave. Set aside.
Chop the apples, celery, almonds and add to the quinoa. Toss in raisins and then pour the dressing over the mixture and stir. Chill for at least 1 hour (if you can wait that long). Serve on a bed of spinach leaves.
This salad would be great with pineapple in it. You could add some chopped carrots or green onions. Try blueberries or other nuts like walnuts. The possibilities are endless.
