Did you know that besides all the yummy varieties of hummus made from chickpeas like roasted red pepper, sun-dried tomato, roasted garlic, black olive, cilantro-jalepeno, even chocolate mousse, you can also make hummus from cashews. Here is a basic recipe that you can play around with and try different flavors by adding different spices and veggies. Enjoy!
1 cup cashews soaked in water for 4 to 8 hours (use organic raw cashews if you can)
3 Tablespoons tahini
3 to 4 Tablespoons fresh lemon juice
2 Tablespoons nutritional yeast (you can omit if you don’t have it but it gives it more of a cheesy taste)
4 garlic cloves
2 to 3 Tablespoons olive oil
1/4 to 1/2 cup water
1/4 teaspoon sea salt
1 teaspoon red pepper flakes (more if you like a kick to it)
Place all ingredients in food processor or high-speed blender and blend until smooth consistency. If you like it thinner add more water and a little more olive oil. Garnish with olive oil and a dash of paprika. Serve with veggies or homemade pita bread and chips, use as a sandwich spread, or eat it up any way you like….it’s healthy and good for you.
