Cranberry Oatmeal Nut Pancakes

Ahhh pancakes on a beautiful Sunday morning.

Most every morning I have my routine of getting the kids ready for school, making my green smoothie, and eating my chia cereal (with chia seeds, flax seeds, sesame seeds, pumpkin seeds, almonds, blueberries, and almond milk).  But some weekend mornings I just want something different.  This weekend I made some fresh cranberry oatmeal pancakes with 100% pure maple syrup.  They were hearty and delicious, and of course healthy too.

Ingredients

1 1/2 cups unsweetened almond milk
3/4 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1/4 cup ground flaxseed meal
3/4 cup uncooked rolled oats
1/2 cup fresh cranberries
2 to 3 Tablespoons sunflower seeds
1/2 cup chopped walnuts

Directions

Mix almond milk, flour, baking soda, baking powder, salt, and flaxseed meal together.  I used my Vitamix to blend it good.  Add oats, cranberries, walnuts, and sunflower seeds and mix well.  If batter is too thick, add a little more almond milk.

Serve with pure maple syrup or top with a sugar-free fruit compote.
