An apple a day…..

The old saying says “an apple a day keeps the doctor away”, and there really are great health benefits from eating apples.  They are however, among the dirty dozen with regard to pesticides so try to buy organic or wash them thoroughly.

Health Benefits of Apples

1.  They lower cholesterol (and have lots of fiber)
2.  They keep you full (another benefit of the fiber)
3.  They keep you slim (boosting calorie burn and increasing muscle)
4.  They prevent breathing problems (linked with better lung function because of the antioxidant called quercetin)
5.  They fight colds (boosting your Vit C)
6.  They may fight cancer (In 2007 a study from Cornell found compounds called triterpenoids which seem to fight against liver, colon and breast cancers)
7.  They decrease diabetes risk (because of their antioxidants, anthocyanins)
8.  They boost brain power (helping your memory and lowering your risk for Alzheimer’s)

Try this yummy Apple Walnut Salad with Cranberry Vinaigrette

14 cup cranberries (fresh or frozen, thawed)
14 cup balsamic vinegar
1 tbsp red onion (chopped)
1 tbsp maple syrup or agave
1 tsp dijon mustard
1 cup olive oil
10 cups baby greens (mixed)
red delicious apples (cored thinly sliced)
12 cup chopped walnuts (toasted)
1 Puree cranberries in processor until smooth. Add vinegar, onion, syrup or agave and mustard and process until well blended. With processor running, gradually add oil and process until well blended. Transfer to medium bowl. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover; chill. Bring to room temperature and whisk before using.)
2 Combine greens and apples in large bowl. Toss with enough dressing to coat. Sprinkle with walnuts. Serve, passing remaining dressing separately.

You can crumble some vegan cheese or tofu on top.

Apples are very versatile.  Eat them plain or mix them in salads, smoothies, even soups.  Dry them for a great sweet snack with no added sugar or bake them with a little maple syrup and nuts.  Make some homemade apple sauce.  There a tons of great vegan and no sugar recipes out there….let me know your favorite.

  1. Yup, love apples for all the reasons above. I was gifted some honeycrisp variety this week and made apple everything. I think today I’m going to put some in a salad! Thanks for the inspiration!
