Watermelon Mint Drink  and  Vegan Banana Ice Cream

I live in Florida.  Florida is HOT in the summer!  This past week it has been in the 90’s with a heat index in the 100’s.  I also have two daughters who keep very busy with friends and school activities, which means I keep busy with being a taxi driver!  It has been a busy (and did I mention hot) week, so todays recipes are nice and easy, for busy people on the go, as well as refreshingly cool.  You can also make 3 different flavors of ice cream starting with this simple basic base recipe.

Watermelon Mint Drink

This drink is so refreshing and good for you.  Watermelon is great for your heart and fresh mint is good for your digestive tract.  It’s so simple that it’s almost embarrassing to post it as a “recipe.”

1/2 Watermelon

10 Mint Leaves

Blend together and chill or pour over ice.  Add a few more mint leaves to the glass and it has even more minty fresh flavor.  You can also add some fresh lime to give it a little zip 🙂

Vegan Banana Ice Cream

2 Frozen Bananas  (It is always good to have a few bananas frozen and ready to go for recipes. When your bananas are getting ripe, peel them, put them in a zip lock bag and throw them in the freezer.  All ready when you need them).

1/4 cup Almond Milk

1/4 teaspoon Vanilla

1/4 teaspoon Cinnamon

Put all ingredients into a Vitamix (or food processor or other blender) and mix on high for approximately 1 minute.  You can eat it up right away or put it in the freezer for a little while to harden up more like store-bought ice cream.

The great thing about this recipe is it is smooth and creamy just like dairy ice cream but with no dairy.  It is also very versatile.  Try making these other varieties by starting with the above ingredients.

Banana Maple Walnut Ice Cream — simply add 1/4 cup maple syrup and chopped walnuts to the mixture.

Chocolate Banana Ice Cream — simply add 2 Tablespoons of cocoa powder to the mixture.

Triple Almond Ice Cream — simply substitute the cinnamon with 3 Tablespoons of almond butter and add chopped almonds.

Summer is going by quickly (my kids go back to school Aug. 8th) so take some time to whip up some healthy cool treats this weekend.
