Mango Peach Avocado Salsa

Tasty Tuesday recipe

The delicious flavors of summer and locally grown fruit make this salsa to die for.  I live next to Merritt Island in Florida which has numerous mango orchards and they are so fresh, juicy and delectable this time of year.  The produce place that I live across the street from gets juicy Georgia peaches and sells huge Florida avocados that I just can’t resist.  You just can’t go wrong with this tasty and healthy treat.  I don’t add any salt or sugar which jarred salsa’s add.  This also makes a great side dish to veggie burgers or you can put in on top of brown rice or quinoa and add some black beans….yum…a whole meal in one.

Ingredients

1 peach, cut up

1 mango, cut up

1 avocado, cut up

10 cherry tomatoes, cut up

1 jalapeno pepper, chopped

1/4 cup red onion, chopped

1/2 cup fresh cilantro, chopped

3 Tablespoons minced garlic

2 Tablespoons fresh lime juice

3 Tablespoons olive oil

Directions

Mix together cut up peach, mango, avocado, tomatoes, onion and jalapeno.  Stir in Cilantro and garlic.  In small bowl whisk together lime juice and olive oil and then toss with mixture.  Refrigerate for 30 minutes to blend flavors.  Pineapple is another great fruit that works well in this salsa….give it a try.
