Minted Melon Soup

Enjoy a nice chilled soup on a hot summer day.

Ingredients:

1/2 cup water

1/2 cup almond milk

1 1/2 Tablespoons agave

1/2 medium honeydew melon, peeled and seeded

1/2 lime, peeled and seeded

3 to 5 large mint leaves

Directions:

Place all ingredients into Vitamix (or other strong blender) and secure lid.  Turn on and slowly increase speed to high.  Blend for 1 minute.

Chill at least 3 hours before serving.

Makes a great appetizer for a nice summer cookout or dinner.
