These are great for an anytime snack and so easy to make. The flavor combination is sensational! Be sure to check your local farmer’s market or produce place for locally grown and fresh fruits, veggies, and herbs (or grow your own……even better).
1 peach, sliced
1 avocado, sliced
handful of fresh basil leaves
2 Tablespoons extra virgin olive oil
2 Tablespoons balsamic vinegar
pinch of fresh ground black pepper
Put olive oil and vinegar in bowl and whisk together. Toss in peach and avocado and toss lightly. Alternate a peach slice, avocado slice and basil leaf on skewer. Sprinkle with a little black pepper and enjoy.
This is also a great combination to put in a wrap. You can add some greens (spinach leaves, swiss chard, kale…etc.) and other choice veggies to fill it up and get more of a hearty healthy lunch or dinner option.
