Chocolate Chip Cookie Dough, Cinnamon Oatmeal Raisin, and Hot Fudge Brownie Cookie Bars

Yum!  Wholesome Cookie Bars, Energy Bars, or Larabars, whatever you want to call them, made from simple natural ingredients.  These bars are quick to make and you can come up with dozens of different flavors with just a few basic ingredients.  Pick a nut, pick a fruit, add a little spice and there you have it, snacks you feel good about eating and giving to your children (and spouse).

I whipped up a pan of bars in no time and even made three different flavors.  My favorite is the cinnamon oatmeal raisin, which was a little surprising because I LOVE chocolate.  My daughter’s favorite was the Hot Fudge Brownie…although she also liked to eat off all the chocolate chips from the chocolate chip cookie dough bars :)

Walnuts, cashews, almonds, pecans or maybe even a combination.  Start with a raw nut (or two) and then pick an unsweetened fruit like dates or raisins to bind your bars together and sweeten them up.  Add some additional fruit, unsweetened coconut, or unsweetened dried fruit if you like and then spice it up with some cinnamon, unsweetened cocoa powder, vanilla, lemon zest,  or whatever sounds good to you.  You could even add some carrots or veggies…I won’t tell your kids.  It’s that simple!

Cinnamon Oatmeal Raisin

Ingredients

1 cup walnuts
1 cup raisins
3/4 cup oats
1/4 teaspoon vanilla
1/2-1 teaspoon cinnamon
dash of sea salt

Directions

Combine all ingredients in food processor and process away until it starts to get sticky and hold together.  If it is too dry add about 1/2 tablespoon of water.  Spread and press down in pan and put in freezer for 1 hour to set.  Cut into bars and store in refrigerator.  You can also freeze the bars.

Hot Fudge Brownie

Ingredients

1 cup walnuts
1 1/3 cup dates
4 tablespoons unsweetened cocoa powder
1 teaspoon vanilla
dash of sea salt

Directions

Follow the same directions as above.  Add some non-dairy chocolate chips, choffy, or cacao nibs if you want even more chocolate flavor.

Chocolate Chip Cookie Dough

Ingredients

12-15 dates
2 cups cashews
dash of salt
1/4 cup non-dairy chocolate chips

Directions

Combine the dates, cashews, salt and a tiny bit of water (1 teaspoon to start) in food processor and process away until sticky and holding together.  Spread in pan and then sprinkle chips on top and gently pat them down into the bars.  Put in freezer to set, cut into bars, and store in refrigerator.

  1. I tried the hot fudge brownies with raisins instead of dates and they were relish. I added the same amount of raisins (1 1/3 c.)
    Thanks for the recipes!! Will try the oatmeal and cinnamon ones next!!
