The fastest cake you will ever make!

This cake is not only very quick to make but watch how fast it gets gobbled up.  What’s even more amazing is how it is entirely (well almost) made from just fruit and nuts.  So, it’s healthy and you CAN eat as much as you want.  Go ahead, tell your kids to have seconds.

Ingredients

Crust

2 cups raw walnuts
15-20 dates
1 teaspoon vanilla
2 tablespoons coconut oil

Frosting

2 cups raw cashews
2 cups frozen strawberries (or any fruit you like)
1 teaspoon vanilla
2 tablespoons coconut oil

Garnish

any fruit you like

Directions

Combine the four crust ingredients together in food processor until all blended and sticking together.  Add a few more dates or a tablespoon of water if not sticky enough.

Press into a square or rectangular pan (depending on how thick you want the crust).  Place in freezer while making the frosting.

Combine the four frosting ingredients together in a Vitamix or high-speed blender and mix until creamy.  You will need to tamper it down into the blades and add a little water if necessary to get it creamy…but not too much water.

Spread the frosting onto the crust.  Cut and serve with more fruit or some frozen banana ice cream…yum!  Keep leftovers (if there are any) in the refrigerator.
