3 Layer Cookie Bars

Wow!  These cookies are so sweet and delicious and the best part is that they are healthy and have NO sugar!  No form of sugar or sugar substitute went into these cookies.  No agave, honey, syrup, stevia or anything other than natural fruit.

Try them…..you’re gonna love ‘em :)

Ingredients

Bottom layer

1 cup raw brazil nuts
1/3 cup raw cashews
1 cup unsweetened shredded coconut
8-10 pitted dates
1/2 t vanilla
1/4 cup hemp seeds
water as needed

Middle layer

2 cups pitted dates
1 cup raisins (or figs)
1 t vanilla
1/4 cup water
2-3 T almond butter
1/2 T cinnamon

Top layer

1/2 cup oats
1 small apple
1 T cinnamon
dash of nutmeg

Directions

Combine brazil nuts and cashews in food processor and blend until powder.  Add the coconut, dates, vanilla, and  hemp seeds.  Pulse and add a little water to get to a crumbly consistency that stays together when you press it into a ball.

Spread into the bottom of a square or small rectangular pan.

Combine dates, raisins, vanilla, almond butter, water and cinnamon in food processor and blend until you get a sticky consistency and then spread it over the bottom layer.

Combine oats, sliced up apple, cinnamon and nutmeg to food processor and pulse.  Add a few drops of water if needed until you get a crumbly consistency.

Put on top and place in freezer for 30-60 minutes to set.  Cut into squares and keep refrigerated.
