Who would have ever thought that I would be researching and talking about eating weeds! I’m hearing more and more about some of the great health benefits of edible weeds. It is amazing to learn the amount of antioxidants, vitamins, and protein that you can get from weeds.
You may have heard of or seen some things being sold at you local market or grocery store including; dandelion, watercress, or red clover. There are others that you may not have heard of before or didn’t know that they were edible including; purslane, kudzo, lamb’s quarters, and even bamboo! Ask around and talk to some of your local organic farmers or at your local farmer’s market about edible weeds. They can be a delicious and nutritious addition to meals as well as having some medicinal qualities.
