Vegan Mint Chocolate Chip Ice Cream

Ahhhh! Ice cream and summer go hand in hand.  But what if you gave up dairy and you don’t eat sugar?  Dilemma solved!  Try this great recipe for a vegan, healthy, ice cream treat that really tastes like the “real thing.”

Ingredients

2 cans coconut milk (use lite if you are concerned about calories or fat)
6 dates, pitted
1/2 tsp peppermint extract
1/2 tsp pure vanilla extract
1/4 cup cashews
large handful of spinach (don’t worry, you won’t taste it but it will give it a nice green color)
1/4 cup cacao nibs
20 mint leaves

Directions

Blend everything but the cacao nibs and mint leaves in a high-speed blender. Pour into glass bowl.  Put in freezer for several hours.  It will start to get very hard, like a frozen ice cube.  When it starts to freeze put it back in the blender with the cacao nibs and mint leaves.  Blend briefly until creamy and nibs are chopped into ice cream.
