Beet Chips, The Healthy Alternative to Potato Chips

Ok, I know what your thinking….beets?….as a chip?  And yes, those greasy, salty potato chips are tasty (and addicting), but don’t you want to be inspired to get healthy?  Beets and sweet potatoes makes great chips.  Give it a try.

Just take a few organic beet roots and scrub them clean, peel off the outer skin with a vegetable peeler or paring knife, and slice.  Then, in a bowl, combine 1/2 cup water, 1/2 cup cider vinegar, and a tablespoon or two of olive oil.  Soak the beet slices in it and then set on a paper towel to dry a little before putting in the dehydrator.  Sprinkle on a little sea salt and black pepper and stick in the dehydrator for about 24 hours (depending on how thick the slices are you may need more or less time).

Now sit in front of the television with these healthy chips and watch your favorite show.  You won’t have greasy finger prints all over everything and you will feel better eating a healthy, crunchy chip.
