Banana Bread — The Healthy Way!

Need an idea for what to do with those ripe bananas?  Here is a healthy version of the old stand by banana bread.

Ingredients

4 to 5 ripe bananas
2 1/4 cups wheat flour (you can use spelt flour or a gluten-free flour too)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon vanilla
1/4 teaspoon sea salt
1/2 teaspoon cinnamon
1/3 cup raw sunflower seeds
1/3 cup raw pumpkin seeds
1/3 cup chopped raw walnuts
1/2 cup unsweetened almond milk
1/4 cup coconut oil
5 to 10 dates (depending on how sweet you like it)

Directions

Heat oven to 350 degrees.  Finely chop the dates (I threw them in my food processor) and then mash the bananas with the dates.  Add milk, oil and vanilla and set aside.  In a large bowl, add the flour, baking soda, baking powder, salt, and vanilla.  Fold in the banana mixture and then add all the seeds and nuts.

Pour into a greased and floured bread pan and bake for 40 to 45 minutes.

This is a great dairy free, egg free, sugar-free recipe that has good coconut oil in it and yummy, crunchy, nuts and seeds.  I would also try it with some cranberries mixed in for added flavor and maybe a bit more cinnamon or try adding some nutmeg.
