Easy Vegan Carrot Salad

Ingredients

4-5 large carrots, shaved
1/2 to 1 cup walnuts, chopped (I love a lot of crunchy nuts)
2 medium apples, cored and diced (I use 1 green and 1 red)
1/2 to 3/4 cup raisins
1/4 to 1/2 cup vegan mayonnaise  (I used grape seed vegenaise due to time but if you want to make homemade vegan mayo…try the recipe below)

MAYO
1 cup cashews
1/4 cup olive oil
1/4 cup raw cauliflower
1/2 cup water
3 Tablespoons lemon juice
1 teaspoon mustard
1 teaspoon agave syrup
1 teaspoon apple cider vinegar
pinch of salt

Blend all mayo ingredients together in high-speed blender.  Mix with salad ingredients. Chill and Enjoy!
