Hodge Podge Pudding

Have you ever tried to make something that is a variation of another recipe or an experiment with ingredients that sound good together but it doesn’t quite turn out the way you planned?  Well, this is what I am now calling my Hodge Podge Pudding.  It started out as a chocolate-avocado-coconut-almond banana milkshake but was a little to thick to drink through a straw :)

Here’s some pictures and what I did to create it.  It actually was a pretty tasty treat.

Ingredients

1 frozen banana
1 avocado
8 oz unsweetened almond milk
5 pitted dates
2 Tablespoons cacao
2 Tablespoons almond butter (Yum…just made a batch of raw organic almond butter–nothing but almonds!)
1/2 teaspoon vanilla
1/4 cup shredded unsweetened coconut flakes

Directions

Place everything in Vitamix and blend away.  As you can see from the first picture my “milkshake” was too thick to drink from a straw so I decided it was more of a pudding dessert and added a little coconut and some almonds on top.

It is rich, creamy, and decadent!  What a yummy treat.  It is packed with good fats and calcium and makes you feel like you should be eating it while hiding in a closet because it tastes too good to be good for you.

  1. Pushing the frozen fruit down onto the flashing blades of the Vitamix still frightens the life out of me! But it does make great, healthy frozen desserts. Our current favourite is blueberry, banana and a hint of lemon.
