Kristen’s Bean Nut Veggie Burgers

Special Request Sunday!

Here it is.  My own creation of a veggie burger, nut burger and bean burger all combined in one great tasting and packed with goodness burger.  This recipe was created by yours truly and is often imitated but never duplicated :)  This was a request by Liz H……enjoy!

Ingredients

  • 2 Tbsp Olive Oil
  • 4 Tbsp Red onion
  • 3 Tbsp Red pepper
  • 2 tsp Jalapeno (I like more for a spicy burger)
  • 2 Tbsp Garlic
  • 4 Tbsp Carrot
  • 1 Can Black Beans
  • 1/2 Can White northern beans
  • 1/2 Can Chick peas
  • 1/2 tsp Paprika
  • 1/2 tsp chili powder (again…more if you like a spicy burger)
  • 1 tsp Oregano
  • 1 Tbsp Parsley (Chopped)
  • 1 Cup Rolled oats
  • 1/4 Cup Sunflower seeds
  • 1/4 Cup Walnuts
  • 1/2 tsp Cumin
  • 1/2 tsp Celery salt

Directions

  1. Sauté first 6 ingredients and cool
  2. Put everything but black beans in food processor and blend briefly
  3. Put in large bowl and add black beans
  4. Form into patties
  5. Refrigerate at least 30 minutes or freeze.  I put each burger in a separate zip lock sandwich bag and freeze so I can take out individual burgers any time for lunch or dinner)

NOTE:  This is my creation but you can tweak it easily by changing the type of beans or adding different spices.  Throw in other veggies or nuts.  Be creative and make a great vegan burger.  Notice that there is no egg or bread crumbs, just all good ingredients.  These are great cooked in a pan, toaster oven or even on the grill.  Add more veggies on top and use a whole wheat or whole grain bun for added flavors and nutrients.  Enjoy and happy eating!
